The most time consuming part of whisky making is the learning process. Not only is there near infinite possibilities to contend with, we must also age our whiskies for a minimum of 3 years, having to wait to taste the results and see how certain flavours progress. By the time you realize, it’s time to wait at last another 3 years until the next batch features those improvements. Although our patience is being tested (!!!) we are still committed to the craft and this release is a testament to that 💛
Sap Lord 2.0 is our second blend of our 4R mashbill whiskies aged for a minimum of 5 years, before being finished in Canadian maple syrup casks and proofed 50.5%. We both increased the time @floriosugarbush maple syrup spent in our whisky casks, while increasing the time the whisky spent in the resulting maple syrup casks. This additional sweetness added the rounder mouth feel that we were looking for, and to balance that, we upped the alcohol content a touch from last year’s release which resulted in a slightly lower bottle count.
Similar to last year’s release: THIS IS NOT A MAPLE WHISKY…this is a whisky AGED in maple syrup casks that impart a subtle, nuanced and natural maple influence. 🍁
