The literal translation of “Pechuga” is “breast”. During the final distillation a raw chicken breast is hung inside the distillation chamber so that when the alcohol vapours rise.. they pass through a chandelier of goodness.

Mezcaleros who make this deeply personal expression of mezcal typically have their own unique combinations of fruits & herbs that they add to the meat. Rodolfo is no different.

ProMez’s first batch of Pechuga also had guava’s (marinated in honey 🍯 ), pineapple, citrus and damiana (careful this is an aphrodisiac❤️‍🔥) tied to/wrapped around the chicken 🐔. Yes, chicken.
